We know summer is almost over but I’m still crushing hard on zucchini!!  Do you love them as we do??

At this point, they are pretty much available all year round at our local grocery store but we have noticed they are more prevalent in the warmer months.

Our favorite way to eat them is zucchini noodles. We just can’t get enough of zoodles.  They mimic a traditional noodle so nicely that every time we eat them we feel like we consumed a whole vat of homemade spaghetti. #heaven Which sends all kinds of warm fuzzies all over my body.  Seriously, all of the yumminess and none of the carbs!  #killingit

Zucchini noodles are just so satisfying, their flavor is so delicate and smooth AND they’re so healthy… that never happens – right!!  Usually, the food we love isn’t so great for us – but not this time… zucchini noodles for the win people!!  If you haven’t already we encourage you, no I implore you to give them a try!

HOW TO MAKE ZOODLES: 

We recommend a piece of equipment to make this happen, but there are so many options out there (all under $40) that will create these magical strands of healthy buttery goodness.

And now these adorable Zoodle Egg Nests!!

Aren’t these eggs in a nest just precious!??  Not only that but they are low carb, full of nutrition, and pretty quick to make.  We’re all kinds of winning with this easy recipe.

HERE’S HOW TO MAKE THESE EGG NESTS:

First, you spiralize 5-6 small zucchini (aka courgettes).

Place the zucchini noodles into a strainer over a plate or in the sink.  Sprinkle with a ½ teaspoon of salt and toss.  Then preheat your oven to 400 degrees.

While the oven is heating up, the zoodles are releasing their liquid because the salt creates a chemical reaction.  This is exactly what we want for this recipe so the zucchini noodles don’t release their liquid in the baking pan.

When the oven is preheated take a few paper towels, or even a cheesecloth if you prefer, and wrap around the zoodles.  Now give them a good squeeze over the sink so more of their liquid is released.

Next, make 6 nests on a baking sheet.  Create little 2-3 inch wells in each one right in the center for the egg.

Now carefully crack six eggs and add one to each zoodle nest.

Sprinkle with Parmesan cheese, salt, and pepper and bake for 6-8 minutes – 8 minutes being over well eggs.

We made a batch of these and we can eat them for several days.  Hello, breakfast meal prep!  And did we mention this 5-ingredient breakfast is also gluten-free?

You could even add some pesto, harissa, or hot sauce for some added flavor.

  • If desired, add some pesto, harissa or hot sauce for some added flavor.

Notes

Notes:
  • While the oven is heating up, the zoodles are releasing their liquid because the salt creates a chemical reaction. This is exactly what we want for this recipe so the zucchini noodles don’t release their liquid in the baking pan.
  • The eggs will keep cooking even after you remove them from the oven since the pan is very hot. So even though they may look slightly under-cooked We would pull them from the oven. You can always put them back in for a minute if need be.
